Post Can I use the seeds I saved from my produce?

I managed to save a large number of seeds from some of the vegetables I harvested last year and was wondering if they would be viable to plant for this year’s garden. I kept them in air tight baggies after they had dried out and now it’s getting close to time to plant again. I’d be delighted to know that I can use these seeds from last year’s crop in which case, I will save the seeds again this year. I’ve been told by several different people that yes they will work and then some say they won’t work. I’m coming to you, as the expert in the field, to tell me if my seeds will grow. I planted a few of these seeds in starter pots and they did, in fact, produce a sprout. My question is will they produce vegetables? I know the plant will grow but I just don’t know if they will yield any produce. Will be waiting for your answer; time is ticking and I have to get my garden planted soon.
