Default Weed resistant plants; are they safe?

I’ve been reading a lot about these genetically designed plants that are round-up resistant; are these plants really safe and has the produce from them been tested enough to be safe for consumption? Personally I think it’s a wonderful idea and if it is in fact true, I am willing to invest in these plants to see just how round-up resistant they are. I hate weeding; it is the worst part of gardening so this new agriculture discovery is quite an amazing thing. Another question I have is if these plants are round-up resistant, can they be considered organic? I generally try to go completely organic, meaning I pull weeds by hand; I don’t use insecticides, and use natural fertilizer. It is a lot of work just to say I grow organic vegetables. I’m not that set in my ways to forego the organic status, so if these plants are truly resistant to round-up, I will certainly give them a try. What are your personal feelings concerning these types of plants?
